Texas Chili Recipes – Texas Roadhouse Chili Recipe

This is an authentic Texas-style beanless chili recipe that includes roast beef and classic chili spices. For a more substantial flavor, simmer up to 4 hours.

3 pounds boneless roast beef, cut into 1-inch cubes

2 tablespoons olive oil

3 garlic cloves, minced

3 tablespoons chili powder

2 teaspoons ground cumin

3 tablespoons all-purpose flour

1 tablespoon dried oregano

2 cans (14 oz.) Beef broth, divided

1 teaspoon salt

1/4 teaspoon ground black pepper

In a large skillet, heat the olive oil over medium high heat. Add the meat cubes and sauté for 2 minutes. Reduce the heat to medium and add the garlic.

Meanwhile, in a small bowl, combine the chili powder, cumin, and flour. Sprinkle the spices over the meat and stir until all the meat is evenly coated with the spices. Crumble the oregano over the meat and pour in 1 1/2 cans of beef broth.

Add the salt and black pepper. Stir the chili mixture well and bring to a boil. Reduce heat to low, partially cover, and allow chili to simmer for 90 minutes.
Pour in the rest of the beef broth and simmer for another 30 minutes, until the meat is tender and flakes easily.

Remove from heat and let cool. Cover and refrigerate to allow flavors to blend.

3 tablespoons bacon fat

2 large onions, chopped

8 pounds of beef for stew

5 garlic cloves finely chopped

4 tablespoons of ground red chili

4 tablespoons of mild chili powder

1 tablespoon ground cumin

1/4 cup Hungarian sweet paprika

1 teaspoon dried Mexican oregano

3 cans (10 oz.) Tomato sauce

1 can (6 oz) tomato paste

3 cups of water

2 tablespoons of salt

1/4 cup dried parsley (optional)

1 fresh jalapeño pepper

1 cup of masa flour

In a large heavy pot, melt the bacon fat over medium heat. Add the onions and sauté until tender.

In a bowl, combine the meat, garlic, chili powder, chili powder, and cumin. Add to the meat mixture. Break the meat while it cooks; stirring occasionally. Cook for 30 minutes, until the meat is very golden. Sprinkle with the paprika and oregano.

Add the tomato sauce, tomato paste, water, salt, parsley, and jalapeño. Bring to a boil; Reduce heat to low and simmer, uncovered, for 1 hour.

Add the masa flour and cook for 30 more minutes; stirring occasionally.

3 cans (15.5 oz) pinto beans, drained

In a small bowl, combine the garlic powder, chili powder, cumin, and flour. Sprinkle this spice mixture over the meat and stir until the meat is evenly coated.

Add the oregano to the meat mixture. Add the beef broth. Add salt and pepper. Bring to a boil. Add the beans. Reduce heat to low and simmer for 30 minutes.
