Ripe breadfruit pie or pie pie

Breadfruit is found in abundance in the Pacific. When in season, breadfruits make a lovely change to bananas in recipes. Ripe breadfruits, in particular, add a unique flavor to cakes. The breadfruit for this recipe should be very ripe and soft.

Ingredients

  • 1/2 cup butter or margarine
  • 2 eggs
  • 1 teaspoon baking powder
  • 2 cups flour
  • 1 cup of crushed ripe breadfruit
  • 1 cup of sugar
  • teaspoon vanilla
  • 1 teaspoon of baking soda
  • cup of milk

Method

  • Beat the butter and sugar until creamy.
  • Add the vanilla and beat the eggs, the eggs should be added one at a time.
  • Sift the flour and baking powder and set aside.
  • Mix baking soda with milk.
  • Mix the breadfruit with the butter, sugar, egg, and baking soda.
  • Stir until well mixed and put the mixture in a well greased can.
  • Bake for about 45 minutes at 160 degrees Celsius (325 F) or until done.

Variation

Spoon prepared mixture into burger pans and cook 20 minutes or until golden brown. Top with vanilla frosting and serve with ice cream (optional)

This is a nice change to the banana cake, which is very common. Substituting banana for breadfruit gives the cake a unique flavor. Add to your desert recipes and try making this cake for your next occasion at home. It can be a lovely dessert for dinner guests. Serve with ice cream and watch the reaction. You can also make delicious cupcakes with the mixture, top with fresh cream. Kids will just love you for it.
